A study by Ohio State University found that the Puerto Rican diet is generally high in calories, complex carbohydrates, fats, and sodium and lacking in vegetables and whole foods. This has proven to be one contributor of the increasing health risks among the Latino population. As noted by the study, “the population has a tendency toward high blood pressure, heart disease, diabetes (3 to 5 times higher than the general population), cancer, arthritis, gastrointestinal disorders, and obesity.”

The amazing thing is, a plant-based diet almost directly reverses these risks and symptoms. Puerto Rican cuisine is abundant with its own classic and vibrant dishes. Integrating more plant-based ingredients and whole foods into these recipes not only increases the nutritional value, it gives them new life. Replacing meat with plant-based foods in the cuisine increases the health benefits and minimizes the risk of many diet-related diseases that Latino populations are prone to.
